Features

  • Chestnut or oak handle, shade-dried for years

Best for

Home cooks who enjoy caring for their tools, open kitchens where knives are on display, and anyone building a small set of knives that will last.

Who this is not for

  • Anyone who wants a dishwasher-safe, no-maintenance knife: carbon steel must be hand washed and dried, or it will rust.
  • Anyone expecting a uniform, polished factory finish: each piece is hand-forged and the blade darkens with use.
  • Kitchens with stone, glass or composite cutting surfaces: not to use the knife on them.
  • Anyone who needs it within a day or two: it ships in 2–3 business days.

Why we carry it

We’ve been curating design-led pieces since 2009, and few makers we carry put one person’s hands on every piece the way this workshop does. Founded in Anseong in 1845, it is known as South Korea’s oldest blacksmith shop. Master Shin In-Young became a master at 17 and was designated Gyeonggi Province Intangible Cultural Heritage No. 60 in 2016 (per the maker). The X on each handle is the shop’s mark of its best steel.

More from Master Shin’s Anvil: Large Chef's Knife; #62 Kitchen Knife, Medium; #60 Kitchen Knife, Small; #63 Vegetable Knife.

Buy once: durability and care

Carbon steel lasts for decades with simple care: wash by hand, dry at once, oil lightly now and then, and cut on wood. IC Design adds: no frozen food, no honing steel, and pull a stuck blade straight up rather than twisting it. Baking-soda paste on a soft cloth lifts rust spots (no steel wool).

Safety

Very sharp: store it in a block or on a magnetic strip, out of children’s reach.
