A small cutting board of solid hinoki cypress that sits in a white porcelain plate to catch juices, from Kihara’s Sitaku line; 7.48 in square.
Sitaku pairs two materials: a board cut from a single piece of hinoki, the light, naturally fragrant Japanese cypress, and a square white porcelain plate beneath it. The plate collects every drop of juice while you slice a lemon, a tomato or a piece of fruit, and on its own it serves the food you have just cut. At 7.48 in on each side, it is the right size for cutting almost anything small, light and easy to handle, and a quick rinse readies it for the next job. The board also makes a handy trivet at the table. Each hinoki board is finished by hand, and the set is made in Japan, in Gifu and Arita. It is dishwasher safe, and it is designed to work with the other Sitaku tools: ginger grater, lemon press, mortar and storage containers.
